cioccolato&lt;/div&gt;&lt;div&gt;3 o 4 pere&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;frullare latte, burro, zucchero, uova, farina, lievito e sale fino ad ottenere un composto liscio ed omogeneo. tagliare il cioccolato a piccole scaglie o tritarlo e mescolarlo all'impasto. riempire 18 pirottini da muffin per circa metà della loro altezza. pelare le pere ed aggiungerne 3 o 4 cubettini ad ogni muffin, spingendoli sul fondo dello stampo. cuocere a forno preriscaldato a 180°C per circa 20 - 30 minuti. lasciare raffreddare i muffin prima di estrarli dagli stampi per evitare tagliato a pezzetti&lt;/div&gt;&lt;div&gt;50 g di acqua naturale fredda&lt;/div&gt;&lt;div&gt;1 pizzico di sale&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;b&gt;crema di porri&lt;/b&gt;&lt;/div&gt;&lt;div&gt;&lt;b&gt;&lt;br /&gt;&lt;/b&gt;&lt;/div&gt;&lt;div&gt;2 porri&lt;/div&gt;&lt;div&gt;125 ml di latte intero&lt;/div&gt;&lt;div&gt;100 ml di panna fresca&lt;/div&gt;&lt;div&gt;2 uova&lt;/div&gt;&lt;div&gt;40 g di parmigiano grattugiato&lt;/div&gt;&lt;div&gt;sale&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;lavorare velocemente farina e burro ottenendo un composto sbriciolato, formare con esso un piccolo cratere e versarvi al centro l'acqua fredda. impastare fino ad ottenere un composto liscio e formare una palla. avvolgere la pasta brisée in un foglio di pellicola da cucina e lasciarla riposare in frigorifero per almeno 30 min.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;eliminare la parte verde scuro dei porri, lavarli e tagliarli a rondelle sottili. far soffriggere i porri in padella con un po' d'olio finché non appassiscono (circa 5 min). mescolare in una ciotola le uova col parmigiano ed aggiungere il latte, la panna, i porri ed un po' di sale.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;foderare con carta da forno una teglia a cerniera di 24 cm di diametro, stendervi sopra la pasta brisée lasciando dei bordi alti e forare il fondo con una forchetta. coprire la pasta con carta da forno e versarvi sopra dei pesetti da cucina o fagioli secchi affinché la pasta non lieviti. cuocere in forno preriscaldato per 20-30 minuti a 180°C, lasciar intiepidire la pasta ed eliminare i pesetti/fagioli e la carta da forno. versare la crema di porri sulla pasta brisée ed infornare nuovamente a in polvere&lt;br /&gt;30 g di farina 00&lt;br /&gt;2 uova&lt;br /&gt;&lt;br /&gt;fondere il burro ed unirlo ai biscotti sbriciolati. foderare una teglia a cerniera con carta da forno e versarvi sopra i biscotti, premendo bene sul fondo per ottenere una base compatta coi bordi un po' alti. lasciar rassodare la base in frigorifero. nel frattempo, mescolare bene zucchero, tuorli, cacao e farina setacciati. aggiungere da ultimo gli albumi montati a neve, versare la crema sulla base di biscotti ed infornare a 180°C. dopo 30 min abbassare la temperatura del forno a 160°C e cuocere ancora per 15 cioccolato fondente&lt;br /&gt;70 g di burro&lt;br /&gt;4 uova&lt;br /&gt;3 pere&lt;br /&gt;&lt;br /&gt;&lt;div&gt;impastare gli ingredienti per ottenere la pasta frolla. ricoprire una teglia con carta da forno e stendervi sopra la pasta frolla facendo dei bordi un po' alti. coprire con carta da forno e spargere fagioli secchi sulla pasta. cuocere per 15 min in forno preriscaldato a 170°C. nel frattempo, sciogliere il burro a fiamma bassa. spegnere il fornello, aggiungere al burro 50 g di cioccolato fondente e mescolare bene per farlo fondere. montare a lungo 2 uova e 2 tuorli con un pizzico di sale, poi aggiungere zucchero e farina e continuare a montare. aggiungere il cioccolato fuso col burro. tritare i 100 g di cioccolato rimasti ed aggiungerli al resto. pelare le pere e tagliarle a spicchi spessi. versare una parte della crema di cioccolato sulla pasta frolla parzialmente cotta, distribuirvi sopra le pere e ricoprirle con la crema rimasta. cuocere in forno a 180°C un impasto morbido e liscio. lasciar riposare l'impasto per almeno mezz'ora in una ciotola a temperatura ambiente, coperto da un telo o da pellicola per alimenti. suddividere l'impasto in due porzioni. ungere con un po' di olio una porzione di pasta ed allargarla posizionando le mani sotto alla sfoglia fino ad ottenere uno spessore inferiore al millimetro (tanta pazienza!). stendere la sfoglia su una teglia unta o rivestita di carta da forno e distribuirvi sopra la crescenza a pezzetti. lavorare la metà di impasto rimanente fino ad ottenere una sfoglia sottilissima, quasi trasparente. coprire con essa la base della focaccia con la crescenza e sigillare bene i bordi delle due sfoglie. pizzicare la sfoglia superiore in più punti, formando dei forellini. cospargere la focaccia con un filo d'olio ed infornare alla massima temperatura del forno. cuocere finché la superficie della focaccia non diventa ben dorata e mangiare calda.&lt;/div&gt;&lt;div sul fondo di una teglia imburrata o rivestita con carta da forno, lasciando un bordo di pasta un po' alto. Forare la pasta frolla con una forchetta, rivestirla con carta da forno e versarvi sopra fagioli secchi o appositi pesi da cucina. cuocere in forno preriscaldato a 180°C finché la pasta non diventa dorata. mescolare farina e zucchero in una pentola ed aggiungere a poco a poco il latte per non fare grumi. cuocere la crema fino ad un paio di minuti dopo il bollore, continuando a mescolare. togliere la crema dal fuoco ed aggiungere i tuorli mescolando velocemente. versare la crema pasticcera sulla base di pasta frolla già cotta e guarnire con frutta fresca a piacere. per non far ossidare la frutta, la si può coprire con gelatina per dolci. lasciar raffreddare la torta in frigorifero prima di /&gt;sale e pepe&lt;br /&gt;&lt;br /&gt;polenta a piacere&lt;br /&gt;&lt;br /&gt;fare un trito di sedano, carote, cipolla e lardo e soffriggerlo per qualche minuto in una padella con 50 g di burro o olio. aggiungere la carne e farla rosolare in modo uniforme. salare e pepare, aggiungere il vino rosso e lasciarlo evaporare. sciogliere il concentrato di pomodoro in 2 dl di brodo caldo e versarlo sulla carne. cuocere il brasato a fuoco basso con coperchio per circa 4 ore girandolo di tanto in tanto ed aggiungendo altro brodo quando serve. servire caldo con polenta morbida.&lt;div lo zucchero a velo con lo yogurt e la vanillina. far sciogliere la colla di pesce in un pentolino con un paio di cucchiai di acqua a fuoco bassissimo ed aggiungerla alla crema di yogurt. montare la versare il composto di patate e porri sulla sfoglia e stenderlo a uno spessore di circa 2 cm. rimboccare i bordi della pasta sul ripieno, rigare la superficie del ripieno con una forchetta e cuocere zucchero a velo ed unirli al cioccolato. montare la panna e gli albumi (separatamente) a neve ed aggiungerli al resto. mettere la mousse in frigorifero per qualche ora prima di servirla.&lt;div /&gt;&lt;strong&gt;copertura&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;150 g cioccolato fondente&lt;br /&gt;pochissimo latte&lt;br /&gt;&lt;br /&gt;impastare gli ingredienti della base e stendere l'impasto in una teglia grande o in due teglie a cerniera di 24 cm di diametro, lasciando i bordi un po' alti. mescolare col frullatore gli ingredienti per la crema e versarli sopra alla base. cuocere in forno a 160-180°C per circa 45 minuti, finché la crostata non sarà dorata. sciogliere il cioccolato con un po' di latte a bagnomaria e versarlo sulla crostata raffreddata.&lt;div type='text'>torta cioccolatina</title><content type='html'>200 g cioccolato fondente&lt;br /&gt;100 g burro&lt;br /&gt;100 g zucchero&lt;br /&gt;4 uova&lt;br /&gt;1 cucchiaio di cacao amaro&lt;br /&gt;&lt;br /&gt;far sciogliere il cioccolato col burro a bagnomaria.&lt;br /&gt;lasciar raffreddare il composto.&lt;br /&gt;nel frattempo separare i tuorli dagli albumi.&lt;br /&gt;foderare una teglia (preferibilmente a cerniera) con carta da forno. aggiungere lo zucchero, i tuorli e il cacao al composto col cioccolato. montare gli albumi a neve ed aggiungerli al composto.&lt;br /&gt;versare il tutto nella teglia ed infornare a 150-160° per circa 20 min e comunque finché la superficie non si sarà asciugata (la torta deve però rimanere un po' umida all'interno). guarnire con una spolverata zucchero in una ciotola. montare gli albumi a neve ed aggiungerli al mascarpone. bagnare i pavesini nel caffè e stenderne uno strato sul fondo di una teglia. ricoprire i pavesini con la crema al
